Calcium citrate (CAS 813-94-5) is a calcium source supplement. As an organic calcium salt, calcium citrate is more readily absorbed by the body than inorganic calcium, and is commonly used for calcium fortification of foods, especially in dairy products and beverages.
Calcium fortification in the food industry
Calcium citrate is used as a calcium fortifier in food products such as cereal products, dairy beverages and drinking liquids. Due to its superior absorption to inorganic calcium, it is effective in increasing the calcium content of food products. According to the standard for the use of food additives, the amount of calcium citrate added to cereal products is 8-16g/kg, and the amount of calcium citrate added to milk beverages is 1.8-3.6g/kg.
Chelating agent and buffer
Calcium citrate has a strong chelating effect and reduces the effect of metal ions on food quality by forming stable complexes with them. In dairy products, such as low-fat concentrated milk, sweetened condensed milk and thin cream, calcium citrate is commonly used to improve the texture and mouthfeel of the product and to promote tissue coagulation. According to FAO/WHO standards, calcium citrate is used in these foods in accordance with established limits.
